From d\u00e9cor to dinner, autumn can be such an inspiring time of year. <\/p>\n\n\n\n<p>This weekend we are getting into the kitchen and cooking up a harvest style treat for all the family. <\/p>\n\n\n\n<p>Delicious in favour and vibrant in colour, this soup is the perfect warmer after a long walk!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Roasted Pumpkin Soup <\/h2>\n\n\n\n<p><strong>COOK TIME:<\/strong><\/p>\n\n\n\n<p>Under 2 hrs.<\/p>\n\n\n\n<p><strong>MAIN\nINGREDIENT:<\/strong><\/p>\n\n\n\n<p>Vegetables<\/p>\n\n\n\n<p><strong>SERVING SIZE:<\/strong><\/p>\n\n\n\n<p>6-8<strong>O<\/strong><\/p>\n\n\n\n<p>This is a smooth autumnal soup, embellished with melting Gruyere cheese. This is delicious served with the pumpkin seed pesto bread.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"1024\" src=\"https:\/\/www.meadowsandbyrne.com\/blog\/wp-content\/uploads\/2019\/10\/pumpkin-soup-1024x1024.jpg\" alt=\"\" class=\"wp-image-4961\" srcset=\"https:\/\/www.meadowsandbyrne.com\/blog\/wp-content\/uploads\/2019\/10\/pumpkin-soup-1024x1024.jpg 1024w, https:\/\/www.meadowsandbyrne.com\/blog\/wp-content\/uploads\/2019\/10\/pumpkin-soup-150x150.jpg 150w, https:\/\/www.meadowsandbyrne.com\/blog\/wp-content\/uploads\/2019\/10\/pumpkin-soup-300x300.jpg 300w, https:\/\/www.meadowsandbyrne.com\/blog\/wp-content\/uploads\/2019\/10\/pumpkin-soup-768x768.jpg 768w, https:\/\/www.meadowsandbyrne.com\/blog\/wp-content\/uploads\/2019\/10\/pumpkin-soup-640x640.jpg 640w, https:\/\/www.meadowsandbyrne.com\/blog\/wp-content\/uploads\/2019\/10\/pumpkin-soup-70x70.jpg 70w, https:\/\/www.meadowsandbyrne.com\/blog\/wp-content\/uploads\/2019\/10\/pumpkin-soup.jpg 1080w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p><strong>INGREDIENTS<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>2.25kg\n(5lb) piece of pumpkin or squash<\/li><li>3\ntablespoons olive oil<\/li><li>70g\n(2\u00bd oz butter<\/li><li>2\nmedium onions &#8211; chopped<\/li><li>The\nleaves from 6 sprigs of thyme, plus extra leaves to garnish<\/li><li>1.75\nlitres (3pints) light chicken or vegetable stock<\/li><li>300ml\n(\u00bd pint) double or single cream<\/li><li>150g\n(5 \u00bd oz) Gruyere cheese &#8211; coarsely grated<\/li><li>Salt\nand freshly ground black pepper<\/li><\/ul>\n\n\n\n<p><strong>INSTRUCTIONS<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat\nthe oven to 200\u00b0C \/ Fan 180\u00b0C \/ 400\u00b0F \/ Gas Mark 6<\/li><li>Peel\nthe pumpkin or squash, scoop away the fibres and seeds and cut the flesh into\nchunky pieces. Put them into a large roasting tin with the olive oil and some\nseasoning and toss together well. Spread them out in an even layer and roast\nfor 30 &#8211; 40 minutes until tender.<\/li><li>Meanwhile,\nmelt the butter in the casserole and add the onions, half the thyme leaves and\nsome seasoning. Cover and cook gently for about 10 minutes until the onion is\nvery soft but not browned.<\/li><li>Add\nthe roasted pumpkin to the pan with the stock, cover and simmer gently for 20\nminutes.<\/li><li>Leave\nthe soup to cool slightly then blend in a food processor or liquidiser with the\nrest of the thyme leaves, until smooth. Return the casserole to a medium &#8211; low\nheat and bring back to a gentle simmer. Stir in 200ml (7floz) of the cream and\nadjust the seasoning to taste.<\/li><li>Ladle\nthe soup into warmed bowls and swirl in the remaining cream. Pile some of the\ngrated cheese into the centre, scatter with the extra thyme leaves and serve.<\/li><\/ol>\n\n\n\n<p><br> <strong>Cook&#8217;s Notes<\/strong><br><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>This\nsoup can be made with a variety of squashes or pumpkin.
