Coq au Vin Pie is definitely one of these dishes. We love to serve this at dinner parties, on colder evenings or even just when we feel like something comforting. In fact, this is one of the dishes we make most using our Le Creuset Casserole. <\/p>\n\n\n\n<p>Without a doubt, every home should know how to make an appetising pie. What we especially love about Coq au Vin Pie is that despite the name, it&#8217;s not at all complicated to make. Make sure you use quality chicken and whip up some creamy mash as an accompaniment. We bet you&#8217;ll keep going back to this dish again and again. <\/p>\n\n\n\n<p>We kindly received this recipe from Le Creuset. While you can make it with red wine, this version is created using white. <\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><a href=\"https:\/\/www.meadowsandbyrne.com\/le-creuset-round-casserole-24cm-cerise.html?utm_source=MB_Blog&amp;utm_medium=LeCreuset&amp;utm_campaign=LeCreusetCeriseWeek&amp;utm_content=24cmCasseroleDish\"><img loading=\"lazy\" decoding=\"async\" width=\"300\" height=\"300\" src=\"https:\/\/www.meadowsandbyrne.com\/blog\/wp-content\/uploads\/2021\/07\/Untitled-design-17.jpg\" alt=\"Coq au Vin Pie using the Le Creuset 24 cm Round Casserole Dish in Cerise\" class=\"wp-image-5660\" srcset=\"https:\/\/www.meadowsandbyrne.com\/blog\/wp-content\/uploads\/2021\/07\/Untitled-design-17.jpg 300w, https:\/\/www.meadowsandbyrne.com\/blog\/wp-content\/uploads\/2021\/07\/Untitled-design-17-150x150.jpg 150w, https:\/\/www.meadowsandbyrne.com\/blog\/wp-content\/uploads\/2021\/07\/Untitled-design-17-70x70.jpg 70w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption>Coq au Vin Pie using the Le Creuset 24 cm Round Casserole<\/figcaption><\/figure><\/div>\n\n\n\n<h4 class=\"wp-block-heading\">White Wine Coq au Vin Pie<\/h4>\n\n\n\n<p><strong>Serves:<\/strong> 6 &#8211; 8 people<\/p>\n\n\n\n<p><strong>Preparation time: <\/strong>24 hours<strong><\/strong><\/p>\n\n\n\n<p><strong>Cooking time: <\/strong>2 hours 30 minutes<strong><\/strong><\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Ingredients<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>375ml white wine<\/li><li>1 onion, roughly chopped<\/li><li>1 carrot, large slices<\/li><li>1 celery stick, sliced<\/li><li>2 garlic cloves, peeled and crushed<\/li><li>A small bunch of thyme&nbsp;<\/li><li>2 bay leaves<\/li><li>1 whole free-range&nbsp; shredded rotisserie chickens<\/li><li>Olive oil<\/li><li>Salt and pepper<\/li><li>100g pancetta lardons<\/li><li>5 baby potatoes, halved and par-boiled<\/li><li>200g baby leeks, sliced lengthways and cut into thirds<\/li><li>1 shallot, halved and peeled and sliced thickly<\/li><li>3 large carrots, peeled and cut into large chunks<\/li><li>200g portabellini mushrooms, cut in half<\/li><li>50g butter<\/li><li>250ml chicken stock<\/li><li>2 tsp whole-grain mustard<\/li><li>2tsp cornflour<\/li><li>Parsley, chopped<\/li><li>For the pie lid:<\/li><li>400g store-bought puff pastry<\/li><li>1 egg, whisked with a splash of milk for egg wash<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Method:<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>Place a Le Creuset 24cm Signature Round Casserole over medium heat and add the wine, vegetables, and herbs. Simmer to infuse and reduce by half. Remove from the heat, strain and cool.<\/li><li>Then heat the cleaned casserole and add a good drizzle of olive oil. Fry off the pancetta lardons until golden and crispy. Remove and keep aside (use a slotted spoon to remove the lardons so that all the oil fat and flavour remains in the casserole).<\/li><li>Using the same casserole, add a splash more olive oil and fry off the mushrooms in batches. Then season each batch with a little salt. Remove from the casserole using the slotted spoon and place them in a sieve over a large bowl. Fry off the leeks until golden and wilted, remove and place in the same sieve with the mushrooms. Fry the shallots and garlic, remove. Lastly, fry off the carrots. Place the lid of the casserole on and allow the carrots to cook for 10 minutes or until just cooked and golden in colour.<\/li><li>Meanwhile, shred the chicken into a large bowl. Roughly chop a big handful of parsley and mix through the chicken. Following this, add the vegetables to the chicken and mix well.<\/li><li>For the sauce: Pour the reduced wine and stock into the casserole and bring to the boil. Make a paste with the cornflour and a splash of cold water, mixing until free of lumps. Stir through the sauce to thicken. Add the mustard and butter, stirring to combine, then season to taste. Add the sauce to the caramelised vegetables, potatoes, pancetta, and shredded chicken. Mix well to coat all the filling with sauce. Place it back into the casserole.<\/li><\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">For the pastry lid:<\/h4>\n\n\n\n<p>Last but not least, make your lid. Roll out onto a clean work surface and cut in half vertically. Join the two pieces together. Using the casserole lid, cut a circle, make the circle just bigger than the lid to have enough space to cover the top of the pie and score the pastry lid as you desire. Place back in the fridge for 20 minutes. Remove from the fridge and brush with the egg wash using a pastry brush. Finally, place on top of the pie and pinch the edges closed.
