You don’t need to travel around the world to experience good taste. Many dishes can be conjured up with regional and seasonal produce that not only tastes great, but also guarantees freshness, strengthens local producers, and saves long transport routes.<\/p>\n\n\n\n

Inspired by nature’s goodness, the NEW Farm Fresh collection from Le Creuset<\/a> aims to show the many ways that you can cut down on the environmental impact of your kitchen. Investing in durable cookware that is made to last is one such way, along with supporting \u200byour local growers and being more sustainable in your food choices.<\/p>\n\n\n\n

To celebrate the launch of Farm Fresh, Le Creuset have put together some delicious recipes that focus on local produce, such as this Roast Carrot and Parsnip Soup with Toasted Hazelnut Salsa.<\/p>\n\n\n\n

Serves: <\/strong>8<\/p>\n\n\n\n

Preparation time: <\/strong>10 minutes<\/p>\n\n\n\n

Cooking time: <\/strong>55 minutes<\/p>\n\n\n\n

Ingredients<\/strong><\/p>\n\n\n\n

5 carrots (700g), peeled and roughly chopped<\/p>\n\n\n\n

4 parsnips (250g) peeled and roughly chopped<\/p>\n\n\n\n

2 cloves of garlic<\/p>\n\n\n\n

45ml (3 tablespoons) olive oil<\/p>\n\n\n\n

Salt and freshly cracked black pepper<\/p>\n\n\n\n

3 sprigs thyme, leaves picked <\/p>\n\n\n\n

1 brown onion, diced<\/p>\n\n\n\n

5ml (1 teaspoon) cumin seeds<\/p>\n\n\n\n

3\/4 teaspoon ground coriander<\/p>\n\n\n\n

1.25 litres (5 cups) vegetable stock<\/p>\n\n\n\n

400g tin coconut milk<\/p>\n\n\n\n

80ml yoghurt or fresh cream for serving, optional<\/p>\n\n\n\n

Toasted Hazelnut Salsa:<\/p>\n\n\n\n

60g hazelnuts, toasted and roughly chopped<\/p>\n\n\n\n

A handful of flat-leaf parsley, finely chopped<\/p>\n\n\n\n

Zest of 1 lemon<\/p>\n\n\n\n

30ml (2 tablespoons) lemon juice<\/p>\n\n\n\n

60ml (1\/4 cup) extra virgin olive oil<\/p>\n\n\n\n

10ml (2 teaspoons) honey<\/p>\n\n\n\n

Sea salt flakes and freshly cracked black pepper, to taste<\/p>\n\n\n\n

Method<\/strong><\/p>\n\n\n\n

Preheat the oven to 200\u00b0C. Arrange the carrots, parsnips, and garlic on a roasting tray. Drizzle with two tablespoons of olive oil. Season with salt and black pepper. Scatter over the thyme and toss to coat. Roast for 40 \u2013 45 minutes, turning the vegetables over halfway through.<\/p>\n\n\n\n

Heat the remaining oil in a Le Creuset 24cm Signature Round Casserole<\/a>. Add the onion and saut\u00e9 over a medium heat until softened, about 6-8 minutes. Add the cumin and coriander and cook for another minute.<\/p>\n\n\n\n

Add the roast vegetables into the casserole. Add the stock and bring up to the boil. Cover partially with the lid and simmer for 10 -12 minutes. Transfer to a blender and blitz until smooth. Pour the soup back into the casserole. Add the coconut milk and warm through.<\/p>\n\n\n\n

For the salsa, place all the ingredients in a bowl and mix to combine.<\/p>\n\n\n\n

Ladle the soup into warmed bowls. Swirl over a tablespoon of yoghurt or cream and serve the hazelnut salsa alongside.<\/p>\n","protected":false},"excerpt":{"rendered":"
