
Ingredients
For the whipped feta
– 200 g feta cheese
– 100 g cream cheese (full fat)
– 1–2 tsp olive oil (optional, to loosen)
For the balsamic strawberries:
– 6–8 fresh strawberries, sliced
– 1½ tsp balsamic vinegar
– 1 tsp honey
For the topping:
– 1–2 tbsp honey (for drizzling)
– Zest of ½ lemon (optional)
– Cracked black pepper (optional)
– Walnuts and Fresh mint leaves (optional, for garnish)
Instructions
- Make the whipped feta: In a food processor or blender, combine feta and cream cheese. Blend until silky smooth (1–2 minutes). If too thick, add 1–2 tsp olive oil to loosen. Cool in the refrigerator so it can harden. Spread onto a serving plate in soft swirls.
- Prepare balsamic strawberries: In a small bowl, toss sliced strawberries with balsamic vinegar and honey. Let sit for 5–10 minutes to macerate and become glossy.
- Assemble: Spoon the balsamic strawberries and their juices over the whipped feta. Scatter walnuts or almonds on top.
- Finish: Drizzle with honey, sprinkle lemon zest and a touch of cracked black pepper (if using). Garnish with fresh mint leaves.
- Serve & enjoy: Pair with toasted sourdough, flatbreads, or crisp crackers.
TIP: This works beautifully as part of a mezze board or elegant starter spread.
