To Cast Iron or Not to Cast Iron?

Mar. 30, 2026

Before you ‘cast’ judgement… here’s what you might be missing.

Cast iron pans have a reputation. For some, they’re kitchen heroes; for others, they’re a bit… dramatic. Heavy, fussy, “too much work.” At Meadows & Byrne, we’re firmly on the side of love—and once you understand what they can do, it’s easy to see why. But before you decide for yourself, there are a few things about cast iron that might just change your mind.

Let’s start with the magic: heat. Cast iron is slower to heat than other materials, but once it gets there, it holds that heat beautifully. That means consistent cooking, deep caramelisation, and that rich, golden browning you usually associate with a BBQ. Whether you’re searing a steak, crisping up vegetables, or baking a frittata, cast iron delivers flavour in a way few other pans can.

Then there’s the longevity. A cast iron pan isn’t just another piece of cookware—it’s an investment. With proper care, it will last for decades (if not a lifetime), and it actually improves with use. Over time, it builds up a natural non-stick surface known as a patina. The more you cook, the better it performs—something you simply don’t get with most modern non-stick pans.

One of the best things about cast iron is its versatility. You can start a dish on the hob and finish it in the oven, use it on induction, or even bring it out to the barbecue. From tarte tatins to brownies, from perfectly seared steaks to slow-cooked vegetables—it’s a true all-rounder.

Seasoning—what is it (and why does it matter)?

Seasoning might sound complicated, but it’s actually very simple. It’s the process of heating a very thin layer of oil on the surface of your pan until it bonds to the metal, creating a natural, protective coating.

This layer is what:

  • Helps prevent rust
  • Builds that non-stick surface over time
  • Gives your pan its rich, dark finish

The key is thin layers and heat. Too much oil, and the surface can turn sticky instead of smooth. Done properly, seasoning creates a hard, almost glass-like finish that improves every time you cook.

The good news? Most cast iron pans come pre-seasoned, so you can start cooking straight away. From there, every use helps build that surface naturally—especially when cooking with a little oil or fat.

A few simple tips will keep your pan in top condition:

  • Seasoning matters: A thin layer of oil heated into the pan helps build and maintain that non-stick patina.
  • Keep it dry: Moisture is the enemy—always dry thoroughly after washing (a quick heat on the hob helps)
  • Go easy on soap (at first): Warm water and a gentle clean are best while your pan is building its seasoning.
  • Don’t overdo the heat: Medium heat is usually all you need—cast iron holds and distributes it beautifully.

At Meadows & Byrne, we’ve carefully chosen the most popular cast iron pans for modern cooking nad grilling.

The Verdict?

So yes, cast iron pans might have a reputation for being a bit particular. But in reality, its jsut about understanding the basics. Once you do, it becomes one of the most rewarding (and reliable) pieces of cookware you’ll own. You will discover they’re less “high maintenance” and more “high reward.” And in our view, that’s a trade-off well worth making. So to cast iron or not to cast iron? Once you know what it can do, the answer is a full yes. Explore Cast Iron Options HERE.
